Here is an easy recipe for your fresh tagliatelle with a delicious twist. Including the variations with smoked salmon or chicken!
Ingredients (for 4 persons):
- 300 g fresh tagliatelle (AH)
- 1 jar of fresh pesto sauce (AH)
- 250 g mushrooms, sliced
- 1 onion, chopped
- 200 g fresh spinach
- 100 g dairy spread (half a tub of AH)
- A dash of cooking cream
- Optional: 150 g smoked salmon pieces or 200 g chicken fillet, diced
- Olive oil (for frying)
- Salt and pepper to taste
- Optionally grated Parmesan cheese as a topping
Preparation method:

Prepare:
Bring a large pan of salted water to the boil for the tagliatelle. -
Cooking the tagliatelle:
Cook the tagliatelle according to the instructions on the package. Drain and reserve a small cup of the cooking liquid. -
Baking the vegetables:
Heat a dash of olive oil in a large frying pan or wok. Fry the onion until translucent over medium heat. Add the mushrooms and fry until soft and lightly browned. -
Adding spinach:
Add the spinach and stir fry briefly until wilted. Season with salt and pepper. -
How to make creamy pesto sauce:
Reduce heat to low and add the dairy spread, a dash of cooking cream and the pesto sauce to the pan. Stir everything well until a creamy sauce is formed. If necessary, add some of the reserved cooking liquid if the sauce is too thick. -
Optional - add egg white:
- Smoked salmon : Add the salmon pieces to the sauce and heat briefly.
- Chicken : Fry the chicken cubes in a separate pan until golden brown and cooked through. Then add them to the sauce.

Mixing pasta:
Add the cooked tagliatelle to the pan and mix well with the sauce. -
Serve:
Divide the pasta over the plates and garnish with grated Parmesan cheese if desired.
